Ingredients

  • 1  lb.  shrimp peeled and deveined
  • cucumbers sliced about ¾ inch thick
  • radishes sliced thinly
  • 1  Tbsp.  olive oil
  • 1  Tbsp.  cajun seasoning
  • guacamole
  • lime
  • balsamic vinegar or balsamic reduction

Instructions

  • Slice the cucumber about ¾ of an inch thick. Spread the cucumber slices out and top each one with guacamole. You can use homemade guacamole (which always tastes the best and the freshest) or store-bought.
  • Place a thinly sliced piece of radish on top of the guacamole.
  • Heat a large skillet over medium-high heat. Toss the shrimp in the oil and cajun seasoning until blackened. This will take about 2-3 minutes per side.
  • Place one fresh shrimp on top of each guacamole topped cucumber slice. Squeeze a bit of fresh lime juice on top and finish with a drizzle of balsamic vinegar or balsamic reduction.
