Banana Oatmeal Cookies

A deliciously moist oatmeal cookies that's loaded with bananas and chocolate chips! These cookies stay fresh for days but also freeze well if you want to save some for later!

Ingredients

  • 3/4 cup Butter softened
  • 1 cup Light Brown Sugar packed
  • 1/2 cup Sugar
  • 1 Egg
  • 2 Bananas mashed
  • 1.5 cups Flour
  • 1 tsp. Cinnamon
  • 1 tsp Baking Soda
  • 2 tsp. Cornstarch
  • 3 cups Oats
  • 2 cups Semi-sweet Chocolate Chips optional

Instructions

  • Preheat oven to 350 degrees.
  • In a large stand mixer, mix together butter, brown sugar, sugar, egg and mashed bananas until well combined.
  • Add flour, cinnamon, baking soda, and cornstarch until well combined.
  • Stir in oats and chocolate chips.
  • Place tablespoons of cookie dough onto cookie sheets. Bake for 10-12 minutes until the bottoms start to lightly brown.
  • Remove from oven and let cool on cookie sheet for a couple minutes before transferring to a cooling rack.
