Oatmeal Crumb Layer
- 1.5 cups Butter
- 3 cups Rolled Oats
- 3 cups All-purpose Flour
- 2 cups Light Brown Sugar
- 1 tsp Baking Powder
- 1/2 tsp Salt
Blueberry Filling
- 2 cups Blueberries
- 1/2 cup Sugar
- 2 Tbsp. Cornstarch
- 2 Tbsp. Lemon Juice
Oatmeal Crumb Layer
Preheat oven to 350 degrees.
In a large bowl, melt butter. Add remaining crumb ingredients to melted butter. Stir well until completely combined.
Press about 2/3 crumb mixture into the bottom of a 13x9 pan. Press down well. Bake for 10 minutes.
Blueberry Filling
In a medium saucepan, add all ingredients for the blueberry filling. Bring to a boil while stirring constantly. Continue stirring until the mixture has thickened, about 2-3 minutes.
Spread filling over baked crust. Sprinkle reserved crumbs over filling.
Bake for about 25 minutes until the crust just begins to turn a light, golden brown. Remove from oven and cool.
I usually place the cooled bars in the fridge for a couple hours to help them set faster.
Rolled oats work best for this recipe, but I've also used instant oats if that's all I have on-hand.
These can be stored at room temperature or in the fridge. I prefer to eat them chilled from the fridge!
