Easy Pear Quick Bread

- 1 cup Applesauce
- 1 cup Sugar
- 1 cup Brown Sugar
- 3 Eggs
- 2.5 cups Pears peeled, cored and diced
- 2 tsp. Vanilla Extract
- 3 cups All-purpose Flour
- 1 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1 tsp. Salt
- 1 tsp. Cinnamon
- 1 tsp. Nutmeg
Preheat oven to 350 degrees. Spray 2 8x4 loaf pans with non-stick cooking spray. Set aside.
In a large mixing bowl, beat oil, sugars and eggs until well combined. Stir in diced pears and vanilla.
In a separate bowl, combine flour, baking soda, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into went ingredients. Mix well.
Pour batter evenly between prepared pans.
Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Allow loaves to cool in pans for about 10 minutes and then remove to a wire rack to cool completely.
If you do not have applesauce, you can use vegetable oil in its place.
You can serve the bread plain or with a powdered sugar glaze. To make the glaze, put about 3/4 cup powdered sugar in a small bowl. Add 1 Tbsp. milk and stir to combine. Continue adding milk, 1/2 tablespoon at a time, until you reach the drizzling consistency you want.
This bread freezes well. Just wrap a cooled loaf in plastic wrap and then place loaf inside a gallon freezer bag to freeze.
