  • 2.5 cups Pears peeled, cored and diced
  • 2 tsp. Vanilla Extract
  • 3 cups All-purpose Flour
  • 1 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1 tsp. Salt
  • 1 tsp. Cinnamon
  • 1 tsp. Nutmeg

  • Preheat oven to 350 degrees. Spray 2 8x4 loaf pans with non-stick cooking spray. Set aside.
  • In a large mixing bowl, beat oil, sugars and eggs until well combined. Stir in diced pears and vanilla.
  • In a separate bowl, combine flour, baking soda, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into went ingredients. Mix well.
  • Pour batter evenly between prepared pans.
  • Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Allow loaves to cool in pans for about 10 minutes and then remove to a wire rack to cool completely.

Notes

If you do not have applesauce, you can use vegetable oil in its place.
You can serve the bread plain or with a powdered sugar glaze. To  make the glaze, put about 3/4 cup powdered sugar in a small bowl. Add 1 Tbsp. milk and stir to combine. Continue adding milk, 1/2 tablespoon at a time, until you reach the drizzling consistency you want.
This bread freezes well. Just wrap a cooled loaf in plastic wrap and then place loaf inside a gallon freezer bag to freeze.
