- 1/2 cup Butter softened
- 1 cup Granulated Sugar
- 2 Eggs
- 1/2 cup Sour Cream
- 1 tsp. Vanilla Extract
- 1 cup Flour
- 1 cup Oats
- 1 tsp. Baking Soda
- 1 tsp. Salt
- 1/4 cup Milk
- 3 Bananas mashed
Preheat oven to 350 degrees. Grease a 9x5 loaf pan and set aside.
In a stand mixer, combine butter and sugar and cream until well blended. Add eggs, sour cream and vanilla extract and beat until fluffy.
In a medium bowl, add flour, oats, baking soda and salt. stir to combine.
In another small bowl, add milk and mashed bananas and mix until combined.
Add 1/3 of the flour mixture to the butter mixture and blend until just combined. Stir in 1/3 of the banana mixture. Keep alternating until all ingredients are added and there are no flour streaks left.
Pour batter into prepared pan. Bake for 50-60 minutes until it tests done with a toothpick.
