Ingredients

  • 1 lb Ground Beef
  • 1 medium Onion diced
  • 14.5 oz. Diced Tomatoes canned, undrained
  • 1/2 cup Water
  • 2 Tbsp. Taco Seasoning or one packet
  • 16 oz Elbow Macaroni
  • 2 cups Cheddar Cheese shredded, divided

Instructions

  • Bring a pot of water to a boil and cook pasta according to package directions.
  • In a large skillet, cook beef and diced onion over medium heat until beef is no longer pink. Drain fat.
  • Return skillet to burner and add tomatoes, water, taco seasoning. Stir to combine and simmer for 5 minutes. Stir occasionally.
  • Add meat mixture to pasta and combine well.
  • Spread half of mixture in a 13x9 pan. Sprinkle one cup of cheese over top. Top with remaining meat mixture.
  • Cover with foil then put in a baking dish and bake for 30 minutes. Remove foil and sprinkle with remaining cup of cheese. Return to oven, uncovered, and bake for 10 minutes or until cheese is melted.
