- 1.5 lbs Chicken Tenders
- 1 Tbsp. Olive OIl
- Salt
- Pepper
- 3 cloves Garlic minced
- 1 tsp. Thyme
- 1/2 tsp. Red Pepper Flakes
- 1 tsp. Oregano
- 3/4 cup Chicken Broth
- 1/2 cup Heavy Cream
- 1/2 cup Sundried Tomatoes chopped
- 1/3 cup Parmesan grated
- 1 Tbsp. Parsley fresh, chopped
Preheat oven to 375 degrees.
In a large cast iron skillet, heat oil over medium high heat. Season chicken tenders with salt and pepper and sear until golden brown, about 3-4 minutes per side. Transfer to a plate.
Reduce heat to medium. Add garlic, thyme, red pepper flakes and oregano and stir for one minute.
Add chicken broth and heavy cream and stir well. Let cook for about 4-5 minutes, stirring occasionally.
Add parmesan cheese and chopped sun dried tomatoes. Stir into sauce.
Return chicken to pan and flip to coat. Spoon sauce over chicken and then place skillet in preheated oven. Bake for about 15-18 minutes or until cooked through.
Sprinkle chopped fresh parsley over top.
