Ingredients

  • 1.5 lbs Chicken Tenders
  • 1 Tbsp. Olive OIl
  • Salt
  • Pepper
  • 3 cloves Garlic minced
  • 1 tsp. Thyme
  • 1/2 tsp. Red Pepper Flakes
  • 1 tsp. Oregano
  • 3/4 cup Chicken Broth
  • 1/2 cup Heavy Cream
  • 1/2 cup Sundried Tomatoes chopped
  • 1/3 cup Parmesan grated
  • 1 Tbsp. Parsley fresh, chopped

Instructions

  • Preheat oven to 375 degrees.
  • In a large cast iron skillet, heat oil over medium high heat. Season chicken tenders with salt and pepper and sear until golden brown, about 3-4 minutes per side. Transfer to a plate.
  • Reduce heat to medium. Add garlic, thyme, red pepper flakes and oregano and stir for one minute.
  • Add chicken broth and heavy cream and stir well. Let cook for about 4-5 minutes, stirring occasionally.
  • Add parmesan cheese and chopped sun dried tomatoes. Stir into sauce.
  • Return chicken to pan and flip to coat. Spoon sauce over chicken and then place skillet in preheated oven. Bake for about 15-18 minutes or until cooked through.
  • Sprinkle chopped fresh parsley over top.
