Cake
- 1/2 cup Butter softened
- 1/2 cup White Sugar
- 1/2 cup Brown Sugar
- 1 tsp. Vanilla Extract
- 1 Egg large
- 3/4 cup Flour
- 1/4 cup Cocoa Powder
- 1/2 cup Chocolate Chips
Fudge Frosting
- 1.5 cups Powdered Sugar
- 1/4 cup Cocoa Powder
- 1 Tbsp. Butter melted
- 1-2 Tbsp. Boiling Water
Cake
Preheat the oven to 350 degrees. Grease an 8"x8" square baking pan. Then line baking pan with parchment paper. Set aside.
In a stand mixer, add softened butter and both sugars. Beat until pale and creamy.
Add the vanilla extract and the egg and beat until combined.
Stir in the flour and cocoa powder until there are no streaks of dry ingredients left.
Stir in the chocolate chips.
Spoon batter into prepared pan and spread evenly. Bake for 25 minutes or until a tooth pick tests clean. Transfer pan to a wire rack to cool completely.
Fudge Frosting
Sift the powdered sugar and cocoa powder into a bowl and stir to combine.
Add the melted butter and 1 tablespoon of the boiling water. Stir well. If your icing is too thick, you can add 1 more tablespoon of boiling water to get it to spreading consistency.
Spread frosting on cooled cake and then let set for about 15 minutes before you cut it.
