Healthy Zucchini Bread
This recipe for healthy zucchini bread results in a moist, delicate bread that freezes well. It's so easy to make with only 1 bowl and common ingredients.

- 1.5 cups All-purpose flour
- 1/2 tsp. Salt
- 1/2 tsp. Baking powder
- 1/2 tsp. Baking soda
- 1 tsp. Cinnamon
- 1/2 cup Greek yogurt
- 1/3 cup Vegetable Oil
- 1/2 cup Honey
- 1 Egg large
- 1 tsp. Vanilla Extract
- 1 cup Zucchini grated
Preheat oven to 325 degrees. Lightly grease an 8x4" loaf pan and set aside.
In a large mixing bowl, add flour, salt, baking powder, baking soda and cinnamon. Stir well.
Add Greek yogurt, vegetable oil, honey, egg and vanilla extract and stir until combined.
Take grated zucchini and squeeze out any extra moisture. Then add zucchini to batter and fold in until combined.
Transfer batter to prepared loaf pan and bake for 55-60 minutes until a toothpick inserted in center comes out clean.
You can substitute applesauce for the Greek Yogurt.
You can also use whole wheat flour in place of the all-purpose flour. Or use a combination of both flours.
