Peanut Butter Pretzel Bites

The perfect combination of a sweet and salty snack! Pretzels stuffed with peanut butter balls and then dipped in chocolate! Everyone will be asking you for this recipe!

Ingredients

  • 1 cup Creamy Peanut Butter
  • 2 Tbsp. Butter softened
  • 3/4 cup Light Brown Sugar
  • 3/4 cup Powdered Sugar
  • 1 cup Mini Chocolate Chips optional
  • 16 oz Pretzels

Chocolate Coating

  • 2 cups Semi-sweet Chocolate Chips
  • 2 Tbsp. Vegetable Shortening

Instructions

  • Line your counter with wax paper.
  • In the bowl of a stand mixer, add peanut butter, softened butter, brown sugar and powdered sugar. Turn mixer on low until powdered sugar is mixed in. Turn up to medium and continue beating until smooth.
  • Stir in 1 cup of mini chocolate chips. (optional). Mix well.
  • Using a small scoop, scoop about 1/2 tablespoon of peanut butter mixture and roll into a ball. Press between two pretzels and set on wax paper. Continue until all of the peanut butter mixture is gone.
  • In a small bowl, add semi-sweet chocolate chips and shortening. Microwave for one minute and then stir well. Continue microwaving for 20 seconds at a time, stirring well after each time, until it is completely smooth.
  • Dip each pretzel sandwich in the chocolate, tapping it on the edge to remove excess chocolate. Then set back on wax paper and allow the chocolate to harden.

Notes

The pretzels I used are called Snaps, but you can use any type of small pretzel that doesn't have large openings for the peanut butter filling to press through. I linked to Snaps in the ingredients list, though, if that's the kind you prefer.
For the chocolate coating, you can use coconut oil in place of the vegetable shortening. 
If you need your chocolate to set quickly, place your wax paper on cookie sheets. Once it's filled, you can pop it in the fridge to help speed up the setting.
