Cookies
- 1.5 cups Flour
- 3/4 tsp. Baking Soda
- 3/4 tsp. Salt
- 1/2 cup Butter softened
- 1/4 cup Granulated Sugar
- 1/4 cup Brown Sugar
- 1 Egg
- 3/4 tsp. Vanilla Extract
- 2 tsp. Lime Zest
- 2-3 Tbsp. Lime Juice
- 1 cup White Chocolate Chips
Icing
- 1 cup Powdered Sugar
- 2 tsp. Lime Zest
- 2 Tbsp. Lime Juice
Cookies
Preheat oven to 375 degrees. Line a cookie sheet with parchment paper and set aside.
In a medium bowl, combine flour, baking soda and salt. Set aside.
In a large bowl, cream the butter, granulated sugar and brown sugar. Beat in the egg, vanilla, lime zest and lime juice. Combine well.
Slowly add flour mixture just until combined. Stir in the white chocolate chips.
Drop by rounded tablespoonful onto prepared cookie sheet. Bake for 8-9 minutes just until the edges turn a light brown.
Let stand on cookie sheet for a couple minutes before transferring to a wire rack to cool completely.
