Ingredients

Cookies

  • 1.5 cups Flour
  • 3/4 tsp. Baking Soda
  • 3/4 tsp. Salt
  • 1/2 cup Butter softened
  • 1/4 cup Granulated Sugar
  • 1/4 cup Brown Sugar
  • 1 Egg
  • 3/4 tsp. Vanilla Extract
  • 2 tsp. Lime Zest
  • 2-3 Tbsp. Lime Juice
  • 1 cup White Chocolate Chips

Icing

  • 1 cup Powdered Sugar
  • 2 tsp. Lime Zest
  • 2 Tbsp. Lime Juice

Instructions

Cookies

  • Preheat oven to 375 degrees. Line a cookie sheet with parchment paper and set aside.
  • In a medium bowl, combine flour, baking soda and salt. Set aside.
  • In a large bowl, cream the butter, granulated sugar and brown sugar. Beat in the egg, vanilla, lime zest and lime juice. Combine well.
  • Slowly add flour mixture just until combined. Stir in the white chocolate chips.
  • Drop by rounded tablespoonful onto prepared cookie sheet. Bake for 8-9 minutes just until the edges turn a light brown.
  • Let stand on cookie sheet for a couple minutes before transferring to a wire rack to cool completely.

Icing

  • In a small bowl, combine powdered sugar, zest and lime juice until smooth. Spread over tops of cooled cookies. Let set before stacking cookies to store.
