Chocolate Brownie Cake

This Chocolate Brownie Cake is decadent and easy, but only makes a small batch so you aren't left with tons of leftovers! Called a Chocolate Slice in Australia, it's a dessert that everyone will enjoy!

Ingredients

Cake

  • 1/2 cup Butter softened
  • 1/2 cup White Sugar
  • 1/2 cup Brown Sugar
  • 1 tsp. Vanilla Extract
  • 1 Egg large
  • 3/4 cup Flour
  • 1/4 cup Cocoa Powder
  • 1/2 cup Chocolate Chips

Fudge Frosting

  • 1.5 cups Powdered Sugar
  • 1/4 cup Cocoa Powder
  • 1 Tbsp. Butter melted
  • 1-2 Tbsp. Boiling Water

Instructions

Cake

  • Preheat the oven to 350 degrees. Grease an 8"x8" square baking pan. Then line baking pan with parchment paper. Set aside.
  • In a stand mixer, add softened butter and both sugars. Beat until pale and creamy.
  • Add the vanilla extract and the egg and beat until combined.
  • Stir in the flour and cocoa powder until there are no streaks of dry ingredients left.
  • Stir in the chocolate chips.
  • Spoon batter into prepared pan and spread evenly. Bake for 25 minutes or until a tooth pick tests clean. Transfer pan to a wire rack to cool completely.

Fudge Frosting

  • Sift the powdered sugar and cocoa powder into a bowl and stir to combine.
  • Add the melted butter and 1 tablespoon of the boiling water. Stir well. If your icing is too thick, you can add 1 more tablespoon of boiling water to get it to spreading consistency.
  • Spread frosting on cooled cake and then let set for about 15 minutes before you cut it.
